Who is Zach Bigalke?
Zach grew up in Jackson Hole, Wyoming, a transplant from central Wisconsin. He lived year-round on a seasonal resort in Grand Teton National Park with his parents and one younger sister. Playing among moose and in the shadow of the mountains, life offered a dual glimpse at the extremes of society -- a diverse community during the summer as employees and tourists from around the world come to the park; a ghost town in the winter as snow envelops everything in sight.
Zach is a graduate of the Le Cordon Bleu Hospitality and Restaurant Program at Western Culinary Institute in Portland, Oregon. Bigalke has worked at such various restaurants as Serratto, a top-ten fine-dining Italian establishment in Portland, Eagle Ridge Resort and Spa in Galena, Illinois, and Brooks Lake Lodge on Togwotee Pass, Wyoming. His love of fine ingredients and bold presentations currently see him working at the University of Oregon's catering department.
